Each state has its own culinary traditions and specific taste. But there are some dishes that are quite well-known despite states borders. See a
few of the popular ones.
Afang soup
Originally this soup came from South-Eastern Nigeria. But now it is quite well known around Nigeria. Key ingredients are Afang leaves, meat, and snails or fish, according to the season. Usually it is served with garri or fufu.
Suya
This meat dish is well-known all over Nigeria. It is often sold at the streets as a snack. Meat (or rarely a fish) is sliced, rubbed in spice and then barbequed on a skewer. The mix of spice can vary, but usually it includes peanuts, ginger,
peppers, various stock flavours and dried onions. It can be easily found on any street corner of Nigeria.
Dodo
Dodo is a great add to many other dishes. It is extra easy to cook – you just need to cut plantains and fry them. Often they are served with rice or fried eggs. Dodo is eaten all over Nigeria.
Puff Puff
Puff Puff is a traditional African snack. It is similar to donut. Puff Puff is easy to cook. You need just flour, yeast, sugar, butter, salt, water and eggs. Then you fry them in the vegetable oil. Sometimes these balls are rolled in sugar or
cinnamon. Very often they are served at parties as a treat.
Jollof Rice
Jollof Rice is popular in the whole of West Africa. And Nigeria is not an exemption. It is classically made of rice (usually basmati sort), tomatoes, onion, chilly, whole bunch of spice (of your choice) and chicken. But some cooks prefer to add fish or other meat. Also it can be served
with vegetables.
